Does anyone have any experience of going from a keto diet to a more wide variety diet with the calorie counting? Did you experience a plateau or weight gain?

From what I understand you can experience a small weight gain when coming off keto, but that is often water weight.

Calories being equal, you will probably gain few lbs as you will begin to store higher amounts of water/glycogen. If you want, slowly increase carbs to mitigate the water increases. Or say screw it and just understand that some of those big loses will also be big gains.

It should just be some water weight. Just water.

Unless you find it controlled your appetite, or you just lost easier on keto. I gain whenever I try moving away from keto. I'm just hungrier and my energy is up and down. I tend to gain weight when I stop keto. But this will not apply to everyone.

Yes, you would normally gain but it’s not fat, it’s just water as you will store more of it when you introduce carbs into your diet. Moving from a keto diet was the best thing I ever did! :)
