Who wants to be the biggest veggie eater?

so here is a new game. it starts tomorrow and it goes for three days ending on friday. Its a competition to see who can eat the most serving of veggies and fruitsin one day. i am not a big veggie person but i will try to eat more of them. so come here everyday and write down how many servings and of what you ate.

Awesome! I'm in. I don't really struggle with this but I would like to see if I can keep track and aim for higher than normal. Happy to offer any suggestions too along the way.
Here are some serving sizes for veggies if anyone is interested:
1 serving of vegetables =
1/2 cup cut up veggie, raw, cooked, frozen, or canned (looks like the bulb part of a light bulb)
1/2 cup cooked, canned or frozen legumes
1 cup leafy greens
3/4 cup 100% vegetable juice0 -

I eat a huge salad almost every day. One tomato, one cucumber, one onion, one banana pepper!!! Yummy!!!0

How is everyone doing with all the veggies & fruit? So far today, I've had a cup of grapes, 2 carrots, 1 cucumber & 1 tomato.0

so far i've had one peach and 1.5 servings of edamame. I have an apple as an afternoon snack and planning on having some sort of vegetable with dinner and fruit or fruit smoothie for dessert0

so i did better then usualy but not that great compared to everyone else! for breakfast (yes breakfast) i hat 3.5 servings of green beans. for supper i had 1.5 servings of peaches.0

Yesterday's totals:
grapes - 1 cup
carrots - 2 (1 lg, 1md)
roma tomato - 1
cucumber - 1 lg
broccoli - 2 cups
red bell pepper - 1 lg
peaches - 2 sm
I'm not sure how many servings that is exactly (10? 14?) but it's definitely more than normal! Thanks for posting this challenge.0 -
I want to see pics of how this works out! But only of certain vegatables; and there should be a prize for whoever eats the biggest whole carrot, cucumber, butternut squash, etc.
i think the prize should be the most unsualy veg or the widest variety!0 -
I have just found this topic as i am munching my way through my salad for lunch, and just wanted to share something...
My usual salad contains mixed salad leaves, cucumber & red pepper, which i have with either cottage cheese or some meat & a boiled egg. Today i added a chopped up raw carrot (quite small, 75g in weight) and OMG it is so much more filling!! I usually gobble it up in about 10 minutes flat, but the carrot is bulking it up like crazy!
i feel a bit stupid for thinking this is the most exciting revelation ever, but it really is!!!0
