Need a recipe for a low carb enchilada sauce!!!!
Hey all,
My sister is visiting from Las Vegas and we will be making an authentic mexican dinner tomorrow night. She wants to make a copy cat version of Chi Chi's Chicken Enchilada SUpremas ( they are made with a white sauce). I am on a eating plan where i can only have 15 carbs for dinner so i was planning on just eating the sauce and chicken ( no torilla) but yikes i plugged the sauce in and I will go WAY over my limit. Does anyone have any ideas on how I can make a low carb enchilada sauce for myself???
Any suggestions would be awesome. Thanks in advance

If you make a green enchilada sauce, it's only peppers and stuff. (look up green enchilada sauce on the internet). Or just buy a canned green sauce.0

Can you just have red enchilada sauce instead? Or would it not go with the other ingredients? That would be my main recommendation. I'm not sure what's in the white sauce that makes it so high in carbs, but I'm sure you can find a recipe for it online that would fit into your eating plan better.0

This is a white sauce that looks perfect minus the flour. Do you have Carbquik or Carbalose flour at home? You could sub it for the flour and it would only add 2 net carbs.0 -

The white sauce has cream of mushroom, cream of chicken soups, cheese, cilantro, jalepenos, and sour cream.
Maybe I will just try the enchilada sauce and make mine in a different pan.... or i just saw something for the philadelphia cooking creme in the santa fe flavor, maybe that would work, it seems pretty low carb

There's a recipe in the Primal Blueprint cookbook for enchiladas but instead of tortillas they make wraps using egg whites. If you don't have that cookbook there is a video here:
