From Slimming world to counting calories

Joined this a few months ago, it's taken a while to swap from slimming world way of life to counting calories instead but I'm struggling to eat enough food to be able to enter my diaries every day, and need ideas whats best to eat for the amount of gym I do xxx

    Either eat bigger portions of the foods you're already eating or add more calorie-dense foods to your diet.

    If you need to lose weight, I highly doubt there's a real difficulty eating the minimum required calories (1200). Make sure you aren't eating more than you think you are (use a food scale, pick genuine database entries, log everything, hit your calorie target every day, no cheating, guesstimating, forgetting). You can eat anything you want. When you consider what you want, you'll want to think about satiety, energy, taste, daily schedule, social situations, and maybe more.

    Plan to eat more, larger portions, and have go to easy back up meals. I for some odd reason really like Malt-o-meal so I use it as my easy back up, two servings is 250 ish calories with good carbs and some protein and it I need some extra fat I just throw some butter in there.

    I definitely don't need extra fat, need to go less on that and up my protein

    For those who say the should be no difficulty reaching 1200, that may be true for you, but it doesn't apply to everyone. I struggle meeting the minimum every day. For so many reasons: health (autoimmune issues make me dread meal time), time (single mom of 4 kids and very busy), and lack of appetite (i assume this is stress related). I do little things during the day to bring up calorie intake. If this helps, here's some things I try: This morning I was too busy for breakfast and ate a spoon full of peanut butter. I keep juice and/or kombucha around to help me pack in some extra calories if I am lacking. I try to keep cooked meet in my fridge so that I can heat it up and snack when in a hurry (meatballs or chicken are my favorite). I used to cook with water or broth bc of religious reasons (I'm Orthodox Christian), but decided it was important to occasionally use olive oil or something similar. Sometimes the little things can add up during the day and helps me meet my calorie goal.
