Keto percentage ratios?

I have been mostly paleo for quite a few years. I am now trying Keto to see if it will help me drop weight and further reduce my inflammation and fatigue.
Reading up and trying to get the hang if it. Definitely went into slight Keto and have been experiencing a bit of keto flu. Cold hands and feet, headache, tired a little loopy.
Today I stayed under my calories of 1200 but above my carb count. So far (only 3 days) I never seem to get high enough on fats.
According to a percentage I found of 5% carbs 75% fat 20% protein. Using that ratio I should be at 16 carbs for a 1200 calorie diet. My carb count was still pretty low 33grams but my ratios were off.
Does going outside of your percentage ratios kick you out of Ketosis?
