Wasabi Avocado Salad Dressing
I went to Mongolian Barbecue
this weekend and tried the most amazing wasabi salad dressing. Knowing that it probably wasn't the healthiest dressing, as most commercial dressings are made with processed vegetable oils and way too much salt, I had to recreate it at home. It turned out better than I dreamed! Simple and delicious. Recipe is as follows:
2 cups Greek yogurt (I prefer Fage fuller fat)
1/2 avocado
4-5 cloves of garlic
1/2 lemon
3 tbs vinegar
6 tsp wasabi paste (found at most grocery stores in the asian section) (this is according to taste. Go lighter if you're a lightweight :])
2 tbs olive oil
Combine all ingredients in a food processor and process until smooth, scraping down the sides once halfway through.
Serve over salad of your choice or as a sauce next to steamed veggies, chicken, fish, etc.
Serving size: 2 tbs
Servings: 20
Nutritional information: 2.7 grams carbohydrate, 3.9 grams of fat, 2.7 grams of protein, 53 mg sodium (2.3% RDA (recommended daily amount)
