Need a good idea for something to take to a BBQ potluck

We are going to a BBQ potluck for dinner tomorrow night and I need some inspiration. The hostess is making ribs and guests are supposed to bring side dishes and desserts. This is something a group of our friends do every week with a different theme and I am running out of healthy ideas to bring for our dish. Suggestions would be great. Thanks.

What about some fresh tomato wedges drizzled with a bit of olive oil, a splash of balsamic, basil and some feta or mozzarella? Pretty healthy, actually ... and really tasty (i had some yesterday).

Quinoa Chili:
1 cup dry quinoa
2 cups black beans
1 cup Garbanzo beans (make sure to rinse all your beans if using canned)
Diced tomatoes (1 can of lime/cilantro Rotel and 2 cans of plain diced tomatoes)
1 can corn (undrained; if you use frozen corn, just add some water)
2 carrots (chopped and boiled)
1 diced bell pepper (I used an orange one, for more color)
Spinach (fresh, frozen, or canned)
Cilantro (you really need this flavor to pop to make the chili)
Diced onion (about 1/2 an onion)
Lime juice (one lime should do it)
Cumin (1 tsp)
Minced garlic (two cloves)
Other spices to taste (I used a pinch of red pepper flakes and a light sprinkle of chili powder)
Serving ideas: grated cheese, tortilla chips, diced green chile, sour cream
Cook quinoa according to directions, add everything to the crockpot and cook on low heat for four hours.0 -

A cold grilled marinated veggie medley
Whole wheat cous cous salad (chilled)
Fresh farmstand ripe tomatoes with very thinly sliced onion, tossed in a light Greek Dressing (Light Gazebo Room)
Angel food cake with fresh berries and fat free whipped cream

This was exactly my thought. Glad I read the posts before replying. Kinda like a corn and bean salsa. Yummy0
