Is the only way to deal with this to go to bed

No, but going to bed will help. Night time snacking is often highly linked to habits, and habits can be broken. I had a client who was actually able to break the habit just by sitting on the opposite side of the sofa and deciding that on that side she would only drink tea. Sometimes it takes more changes, like for example going for a walk when the cookies start to scream at you to go eat them or to do something else. It is also easier if everyone in the house commits to stopping the mindless eating in front of the tv, and start committing to a healthier option, either by eating some vegetables as snacks or just managing to not eat and all and still enjoy each others company.0
