Any good vegetarian or vegan recipes anyone has ? I’m trying to be healthier and use this app to log everything but I just need more vegetarian recipes !

Here are a few of my favorite vegan recipes:

Pasta:
https://yupitsvegan.com/vegan-one-pot-creamy-garlic-pasta/ (I add a few tablespoons of nutritional yeast and lower the oil to only 1/2 tsp and swapped onion powder for the shallots)

Soup
https://www.theroastedroot.net/vegan-corn-chowder/ (I reduce the oil, about to 1/2 tsp - 1 tsp. I've also made this swapping the potatoes for white kidney beans and coconut milk for almond milk)
https://www.fullofbeans.us/the-best-vegan-chili-ever/ (I again reduce the oil to about 1/2 tsp and usually up the spices because I like spicy)

I also really like making BBQ beans. You just cook some onions in a little bit of oil (I use 1/4 tsp with some water), then added 1 cup cooked beans and 2 tbsp of your favorite BBQ sauce. Cook until heated through. I like this with veggies on the side, either cooked or raw.

If you like Japanese inspired recipes, try Fried eggplant with miso sauce by Neil Perry.

I did not have red miso, but white miso worked really well with it. If you do like really robust strong miso, then definitely make sure it is the red miso as called for by the recipe. I made this today and it was really good, yummy enough that my picky partner even had some

I had it with rice and salad and some steamed asian greens.
