Off the top of my head: Chili, chickpea curry, pasta in tomato-lentil sauce, refried beans mixed with shredded cabbage and salsa, zucchini noodles with peanut sauce (made with PB2 to lower the calories) and baked tofu, gazpacho, lentil soup, tomato soup, tofu scramble, stuffed peppers (using tofu or quinoa or whatever you like).3

Veggie curries, stews, chillies and stirfries are always a good bet. If you're running low on calories, then Cauliflower rice or broccoli rice are great subs for regular rice (and they're delicious).
Tonight, I had my version of a "Full English Breakfast" for dinner - veggie sausages, eggs, mushrooms, baked beans, and toast. All in, it was about 500 calories and a packed a ton of protein.1 -
To lower my calories I have been replacing a lot of grains with things like spiralized zucchini and cauliflower rice. I also find that some veggies I like cheese on I have been able to use nutritional yeast instead. Sprinkled over the food after cooking and mixing it in gives a real earthy, savory taste and I dont even miss the cheese really. Tonight for dinner I made a veggie/tofu stir fry and used riced cauliflower in place of the regular rice. Was amazingly good0

Veggie tortillas with smokey spice & sour cream
Veggie sausages with mash
Veggie pie with salad & salad potatoes
Gnocchi with pesto
Beetburgers and salad
Melanzanne
Veggie stew - with baked potato
Loaded vegetable no cheese pizza.... I could go on!

I like roasted broccoli and cauliflower (all roasted vegetables really) on top of brown rice or lentils or faro and then topped with balsalmic glaze. I love balsalmic glaze instead of high calorie oils lately. Also roasted sweet potatoes and brussel sprouts with toasted pecans and seasonings.

Yes, my husband introduced me to quite a few vegetarian meals as he grew up that way. Mostly they ate lots of carbs and starch but there is one that I LOVE...haystacks. Black beans, lettuce, tomato, black olives, light sour cream, salsa, all on top of corn chips. You can substitute or add just about any vegetable (like corn or avocado). I make huge bags of dry black beans in the crock pot, separate them out to serving sizes in Ziploc bags then freeze them and thaw and use as needed. My kids love them too.0
