Vegetable Sheet Cutter

I just received a Kitchenaid Sheet Cutter and found that there are few recipes on line. Does anyone have one and what have you made?

    I bought one but have been out of town caring for a friend and it sits at home waiting for me to return. I wanted it to try making naruto style sushi. Sushi rolls with a cucumber wrapper. I will be watching this thread I hope you get some great ideas.

    I wasn't familiar with this so I looked it up. The first things that came to my mind are making sheets of eggplant for lasagna and sheets of zucchini or squash to grill. I do those by hand, so this attachment would be handy for that. I'll be interested to see what others have to add as well.
