So at the end of every workout, i would be 155-157 somewhere around that range but for the past week its been stuck at 159!? I dont (poop) a lot for some reason even though i eat a big meal aka OMAD diet and still am under caloric restriction. So if im counting calories, sleeping, staying hydrated etc.... why did i gain weight and keep it on for over a week? Hormone imbalance?

Anyone who gives you an answer is full of kittens. Without thorough testing there is no way to know.5

Why weigh yourself after every workout? That might be discouraging for some folks . There's a lot more variables that go into it but things like retaining water, muscle soreness, constipation or un -excreted food and a lot of other things can make the scale go up. It doesn't mean you've gained fat or muscle.
I wouldn't sweat the small stuff like this. This will be one long hard road for you if you worry about stuff like this.5 -
Fruit and vegetable challenge, it did the trick for me.1

why are you weighing yourself at the end of each workout? we can definitely rule out muscle - you did not put on 4lbs of muscle mass in one workout or one week, but as others said, it could be anything else.2
