Sweet Potato Cottage Pie.

Made this the other day to make use of sweet potatoes and onions that need using up. Still tweaking it but so far it's tasting pretty good and ticking a few boxes nutrition-wise.

Serves 3 portions (Can probably be stretched to 4 if served with other things)

Filling:
423 g, Beef Mince
174 gram, carrots chopped
63.00 g, Red Bell Pepper Chopped
133.00 g, White Onion chopped
49.00 g, Red Onion chopped
0.45 g, pepper, black
60 millilitre, Water

Topping:
500 gram, Sweet Potato
0.25 tsp, Salt
2 clove, Garlic, chopped
1g, Hot Chilli Powder
6 tbsp, HP Brown Sauce
1tbsp, Extra Virgin Olive Oil

Preheat oven to 375℉/190℃

In a skillet on medium heat add the ground beef, carrots, onions, peppers and minced garlic.

Cook on medium heat until carrots are soft, about 12-15 minutes. Begin making the topping while the meat filling cooks.

Once the carrots are soft, stir in brown sauce, water, seasonings and pepper.

For the topping: Steam or bake the sweet potatoes until fork tender. Then add all of the topping ingredients to a jug and mash/blend.

Final step: transfer the meat filling to a casserole dish and top the meat filling with the sweet potato mash. Dash with sea salt and chilli powder.

Bake for 10 minutes. Remove from oven and serve.

    Very versatile recipe because you could use whatever you have on hand for the filling. I've been doing a similar dish but putting it together opposite: I saute on the stove top whatever vegetables and protein I have on hand, bake the sweet potatoes in the oven, then scoop out the filling of the potatoes, mix it with the mixture on the stove top, stuff the potatoes and bake again. Basically just twice baked potatoes with extra filling.
