****77 calorie Oatmeal Raisin Cookie****
I got this recipe from a friend of mine & seriously, these are the BEST oatmeal raisin cookies I've ever had -- and I've had a lot! I always get compliments on them! This batch made 46 cookies for me & each one is only 77 calories! I'll list the rest of the nutritional info below the recipe. Enjoy.
Oatmeal Raisin Cookies
Oven: 375
1/2 cup butter, softened
1/4 cup no sugar added applesauce
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 eggs
1 teaspoon vanilla
1 3/4 cup all-purpose flour
2 cups rolled oats
1 cup raisins
1. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda, and, if desired, cinnamon and cloves. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats & raisins.
2. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake at 375 for 8-10 minutes or until edges are golden. Cool on cookie sheet for one minute. Transfer to wire rack and let cool.
** I usually bake mine perfectly at around 9 to 9 1/2 minutes.
** I use an ice cream scoop that is 3/4 ounces (about 5 teaspoons).
