    @kballsocc how did your quinoa burgers turn out?

    They were pretty tasty, the bit of horseradish cheese on top gave them a nice kick. Definitely will be adding them into the rotation.

    Two weeks ago I got a lot of parsnips in my CSA box, so I used them up with a recipe for roasted parsnips with lemon and herbs. It was really good. The lemons cut the bitterness of the parsnips.

    I made a version of this for the first time tonight with some modifictions.

    I only used 2 tablespoons of sugar but it was still to sweet for my taste to will try only 1 tablespoon next time. No need to deep fry the chicken. Dredge with flour or cornstarch and arrange on hot greased flat pan in a single layer. Pan fry 2-3 minutes and then flip pieces over to fry on the other side. Cuts down on both calories and cleanup.

    I am fighting the "don't want to do it"s this week, so my plan for the upcoming week is the exact opposite of ambitious, but I still managed to work in some new things to try...

    chickpea pasta with sundried tomatoes and artichoke hearts
    tofu bacon blt on sourdough bread with avocado
    avocado white bean sandwich
    slaw of cabbage, oranges, apples, almonds, sweet onions, and creamy chipotle dressing (thank you @janejellyroll )
    apple pancakes topped with banana and maple syrup

    Your meals sound really delicious. I love pasta and sun-dried tomatoes. I have a box of chickpea pasta but I haven't tried it yet. Have you tried it before? If so, how do you like it compared to "regular" pasta?

    I’m in the same boat! For us, it helped that we kinda made a deal that we’d try a new thing once a week. Sure, we don’t always do that, but it’s still a possibility. It also took me pretty much a full year of patient trying, getting used to things and figuring out his taste and texture palate, but we are now in a situation where he observes Meatless Monday even when I’m not home, and has developed an independent love of tofu. I found it helpful to just stick with well-loved cuisines and expand from there. For example, he loves tex-mex and indian food, so trying recipes that use the same spices and have similar textures really helped.

    I haven't actually. I've been a bit skeptical because I am such a fan of traditional pasta but the chickpea was on a good sale this week and I've been running a bit light on the protein lately so I thought I'd give it a whirl. I'll let you know how it turns out.

    I finally got around to trying this last night.

    Things I did differently:
    Salted the chicken while it was sitting in the corn starch.
    Didn't deep fry the chicken but arranged cornstarch dredged pieces in a single layer in a flat frying pan and fried without stirring on one side for 2 minutes, then flipped and fried the other side. Fewer calories and easier cleanup.
    Used 2 tablespoons of sugar in the sauce instead of 3.
    Added a 2 tablespoons of Chinese rice wine, and skipped the water.
    Added a small handful of green beans and spring onions lurking at the bottom of the fridge, blanched in the microwave for 2 minutes.

    Things I will do differently next time:
    Reduce sugar to 1 tablespoon. It was still pretty sweet for my taste.

    So for breakfast this morning I made the apple pancakes from the mfp blog. They turned out pretty well but mfp's quarter cup must be smaller than mine because I got nine pancakes, not twelve...so I had to recompute the calories of the meal. They were thicker than the picture too, and I prefer thinner crispier pancakes, so I think I will add a little extra liquid next time.

    I made this for the first time tonight. It's a good meal for hot weather. Ate it on vacation in Thailand a while ago.

    I thought the flavor went well with the lemon - and keeps the lemon from being too strong. It also keeps the cake moist!

    I'm excited to share that my tweaked version of Thai Basil Beef bowl is very tasty!

    I will warn you that unless you have prechopped/prepared: ginger, garlic, carrots, green onion, spicy pepper, lemongrass, lime, basil; this recipe will not take anywhere NEAR 20 mins to make in total. I think I took at least 20 mins in chopping prep but I watch tv as I go.

    In case anyone is interested in a tweaked version that is ~400 calories and a bit lower in sodium but still is tasty, I attached what I actually made below. Can't wait to eat this again for dinner tomorrow.

    Okay, I finally made the Japanese Curry that I referenced on the last page. It was really good!

    Had it on basmati rice and it was a really filling and satisfying dinner.

    The next thing I want to try is a spinach pie recipe I've had bookmarked forever. It's from a book called "Street Vegan," but it's really similar to this: https://theveglife.com/spanakopita-vegan/ except it doesn't use any vegan cheeses.
