Snickerdoodle ice cream sandwiches

Hey guys! I found this recipe in my Woman's Day magazine and they were so yummy! I think that if you do light, or low fat ice cream or frozen yogurt, you might be able to make this even less calories. I made it with light, but didnt bother changing it in my food diary.
Snickerdoodle ice cream sandwiches
Makes 12
1 1/2 cup all purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp kosher salt
1/2 cup (1 stick) unsalted butter-at room temp.
1/2 cup plus 2 tbsp firmly packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1/4 tsp ground cinnamon
3 cups ice cream
1. Heat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
2.In a med bowl, whisk together the flour, cream of tartar, bakign soda, and salt.
Using an electric mixer, beat the butter, brown sugar and 2 tbsp of the granulated sugar in a large bowl, until fluffy, about 3 min. Beat in the egg and vanilla. Reduce speed and gradually add the four mixture, mixing just until incorporated.
3.In a small bowl, combine the cinnamon and remaining 2 tbsp of sugar. Form the dough into 1 1/2 in. balls, roll in the cinnamon-sugar mixture and place on baking sheets. Bake until set and edges are golden brown, 10 to 12 minutes. Let cool for 5 minutes, before moving to wire racks.
4. Form sandwiches with 2 cookies and 1/4 cup of ice cream!
Per sandwich: 268 cal., 13 G fat, (8 G sat. fat), 48 MG Chol, 121 MG Sod, 4 G Pro, 36 G Car, 22 G sugar,1 G fiber
