    I'm vegan as well :)

    my current favorite meal is trader joes cauliflower gnocchi with their vegan pesto, some steamed vegetables, and a bit of GoVeggie Parmesan on top.

    also love dairy free yogurt with some granola and blackberries/strawberries/blueberries/etc for breakfast

    I'm not 100% vegan, but I try to eat many of my meals without dairy. Some of the items aren't vegan but you can likely make them vegan by using vegan cheese, or vegan meat substitutes. This is just what I have been eating lately. In the winter it tends to change and I'll eat things like warm oatmeal, soups and chili, etc.

    Breakfasts:
    1. Shredded wheat cereal or plain cheerios with almond milk and fruit (usually banana)
    2. Sprouted toast with peanut butter and fruit
    3. English muffin with veggie sausage and cheese with fruit
    4. Hash browns with peppers and onions (cooked with only a bit of cooking spray) with fruit and veggie sausage
    5. Whole wheat waffles with sugar free syrup, fruit and veggie sausage
    6. Scrambled tofu with peppers, onions and sprouted toast

    Lunches:
    1. Chickpea "tuna" salad. I mash chickpeas with veganaise (2 TBSP), mustard (1-2 tsp), dill relish (1-2 TBSP) chopped yellow onion, chopped celery. I eat this cold with sprouted bread or light bread and a piece of fruit like and apple.
    2. Peanut butter and honey sandwich on sprouted bread along with baby carrots and fruit.
    3. Crudite platter with pita bread, hummus, celery, carrots and fruit
    4. Often I go to Subway and get a 6" veggie delight when I am at work and forget to pack a lunch which is usually one of the items above or packed leftovers.

    Dinners:

    1. Tacos, Taco Salads, Burritos or Tostadas: I often will make a large batch of black beans cooked with sauteed onions, bell peppers and corn and use it throughout the week to make the items listed. I use corn tortillas and top them with lettuce, avocado or guac, pico de gallo and hot sauce.
    2. Fajitas: I will saute or grill corn, zucchini, peppers, onions, portabella mushrooms and asparagus and eat that in corn tortillas with avocado or guac, pico de gallo, shredded lettuce and hot sauce.
    3. Black bean burgers or vegan boca burgers with corn on the cob and baked beans
    4. Baked potato with fat free greek yogurt (you could sub vegan sour cream or yogurt) and chives along with steamed mixed vegetables or a salad
    5. Roasted spaghetti squash with marinara sauce and beyond meatballs along with steamed green beans
    6. Tofu stir fry with honey soy garlic sauce. I saute the tofu, remove from pan and saute veggies (usually asparagus or green beans, bell peppers, scallions, shredded carrots and spinach) and then mix up soy sauce, honey, sriracha, chopped garlic and a bit of rice wine vinegar and add that in to the pan with the veggies and tofu and simmer a few minutes. I cook brown rice in my rice cooker to go along with it.


    I use a non stick pan for most of my cooking to avoid using oil.

    Sarah's Vegan Kitchen and Sweet Potato Soul are my 2 faves. Both have web sites and YouTube channels. Cheap Lazy Vegan is great for fast, inexpensive flavorful foods, too. (in fact, I'm having my version of her "Mexican black bean" rice cooker meal tonight!) Minimalist Baker is another good one, too.
