Easy meal prep lunches

Today I made a bunch of pesto chicken. I halved then cubed four chicken breasts & placed them into the pan with 1 tsp grass-fed butter. Cook on medium high until brown. Turn the flame down to Low. Then I added a whole container of grape tomatos which I cut in half & 5 florets of baby broccoli. I wanted them to still taste crunchy & fresh, especially since I will be reheating it again. Then I mixed in about 3 servings of fresh pesto. This made five meals for me. Good luck!1

I bought some 3 compartment lunch containers from Amazon so we can have a little pick and mix of things - as both me and my husband aren't office based I can't make anything that needs to be reheated and I got bored of salads!
Last week we had:
Chicken tikka chunks
Falafel
Cucumber, carrot and pitta bread slices with hummus dip
This week we are having:
Chicken nuggets
Vegetable pasta (heavy on the veg, light on the pasta) with pesto
Cherry tomatoes, olives and sliced beetroot
All bits are homemade apart from the pesto, the meals work out to be around 500 cals. It doesn't take as much work as it sounds and the variety is nice
