    The vegan mock meats have lots of protein but most have some kind of soy protein or isolate. You can always add flax seed and chia seeds to your smoothies or oatmeal as well for extra protein.

    farro with sweet potato, black beans and spinach. Simple dijon vinaigrette with a little maple syrup for flavor. Sooooooo good!

    Soy milk in smoothies, on cold cereal, to cook hot cereal.

    Canned beans or frozen beans or lentils over a high protein pasta, with the sauce or vegan cheese of your choice.

    Canned beans and canned tomatoes with sauteed onions, peppers, garlic and/or mushrooms (aka vegan chili) over white or sweet potatoes, or over pasta if you're from Cincinnati. Garnish with vegan cheese and/or plain vegan yogurt.

    I like chickpea or lentil pasta with nutritional yeast, a serving is about 13g of protein. I usually get banza pasta from target or lentil pasta from Trader Joe's. Seitan sandwiches are great too! The sweet earth brand is 28g of protein per serving!

    Pumpkin seeds, hemp seeds, chia seeds, spinach, almond butter, hummus (I eat hummus with steamed broccoli ...so delicious) garbonzo beans, lentils (lentils of my favorite) black beans combined with rice, all of these have good protein in them .... I also recommend a vegan plant based protein powder to have in your smoothies....my spirulina also has protein...

    The easiest meal I make is:

    1. Open can of fat free refried beans.
    2. Spread beans on whole wheat tortilla
    3. Add diced onions, wrap, and bake for 5-10 minutes
    4. Top with salsa, lettuce, and plain soy yogurt or tofu sour cream

    I also make:

    1. Open can of black beans
    2. Open can of sweet corn
    3. Combine, stir in salsa to taste
    4. Eat alone or over lettuce as a salad

    And finally:

    1. Open can of vegetarian baked beans
    2. Make whole wheat toast
    3. Spoon beans onto toast

    Vegan Lentil Burgers

    I'll take your second quick meal and raise you one.

    Black Bean Salsa
    - 1 can low sodium black beans rinsed and drained.
    - 2-3 cobs oven or grill roasted corn
    - 1 can Rotel (keep liquid)
    - 1 medium size onion (white or red "but seriously it's purple")
    - 1 bunch cilantro

    Dice onion finely, place in dish. Top with cilantro chopped. Pour over can of Rotel with liquid. Add rosted corn after removing from cob. Top with black beans.

    It's best when you let it sit for awhile. The liquid from the Rotel that the onion and cilantro is soaking in helps take some of the bite away. This is seriously my favorite quick appetizer/snack dish to bring to dinner. It's absolutely grand on chips, salad, tacos, potatoes, whatever.
