Need simple recipes

I am determined to finally loose the extra weight as I am developing knee problems and want to be able to hike again. My problem is that I have cooked for my family for over 30 years and am sick of cooking. I want to be able to figure out meals for myself on keto diet and husband who is not dieting with as little preparation as possible. I need ideas. Favorite simple meals please? If I can find 14 I can just repeat. Thank you for sharing.

    Your family needs some preparation for this kind of change. I got sick of cooking when my children were teenagers. They survived.

    I suggest a family conference where you state your intention. Agree on a schedule, transferring the responsibility. Batch cook some recipes and have them ready to go in the freezer. Write out the instructions for some of the family favourites.

    Why Keto? You can lose weight simply by adjusting portion sizes. You can still make the same meals just divvy them up differently. Keep in mind if you give up the cooking you also lose control over what’s for dinner.

    Let’s take a meat and potatoes dinner. Yours (if you go Keto) will be a slice of roast beef, a salad, and full fat dressing. His will be beef, potatoes with gravy, and some salad too. One meal, two different servings.

    Or poached salmon with rice pilaf and asparagus. You skip eating the rice.

    Or chicken breasts with Alfredo pasta. You set aside your chicken to have with veggies or spiralized zucchini instead of the pasta.

    Or pork loin with caramelised sweet potatoes.

    Or an omelet with a variety of veggies.

    Or baked tofu with teriyaki sauce over roasted baby bok choy. Have a side of rice for other members of the family.

    That’s six meals. You are halfway there.
