    Veggies?

    Birdseye/green giant steamer bags.

^^ This (possibly the only polite use of "Giant Steamer" on this forum as well)

Also, do not overlook the power of lentils and beans. There are some good studies out there about extended benefits of the little nutritional nuggets (and they're quite affordable).

Microwave half a tin of beans or chickpeas with some spinach and then top it with some pesto.
Throw some veggies (asparagus, cauliflower, brussels sprouts, whatever) in the oven with herbs and half a tsp of oil
Chop up some crunchy veggies and have them with a low calorie dip
I'm also all about pickled cabbage at the moment. Goes on the side of everything!

I 2nd the steamer bags. I love them for weeks when I have little time to meal prep.

Healthy is a little subjective, but a nice crusty bread and some olive oil is quick and easy and goes with pretty much anything. You can season the oil with whatever you seasoned something else with (or a complementary flavor) to tie it in with the meal.
