Hey y’all
So it’s my boyfriend’s grandmother’s birthday tomorrow and I’m in charge of making dessert! Problem is that most of us are trying to loose weight. What would be a good sweet treat that will keep us on track?

    The last dessert I brought somewhere was really simple and tasty! It was just strawberries, balsamic vinegar reduction and whipped cream from canister.

    -I cut up a bunch of strawberries several hours ahead of time and stored them in the fridge - for some reason they taste sweeter to me if they have been cut up and rest for an hour or two. No need to add sugar.
    -I made a balsamic vinegar reduction. On the stove heat balsamic vinegar @ low heat. It shouldn't boil. It smells HORRIBLE as it reduces - I promise it is really tasty! As it reduces it becomes syrupy. I usually cook until the volume is reduced by a third or half.

    Meringue nests are only 50cals each those with summer berries and low cal squirty cream or yogurt

    1) Mix equal parts of CoolWhip or Reddy Whip with Fage and add some drops of vanilla extract. Cut and mix all kind berries (blueberries, strawberries, blackberries, etc.), add some kiwis or some other kind of summer fruit that everybody likes. Keep the fruit in the fridge for few hours so they can soak their natural juices (you can add some OJ if you want, or sweet wine if alcohol is not a problem).
    Serve the fruit topped with the whipped cream-Fage mix, and add a small cookie on top for decoration.

    2) Prepare a sugar free, any flavor, Jello mold. Serve with the cream-Fage mix and decorate with berries.

    Sugar free pudding pie made with skim milk, topped with light reddi-whip in a graham cracker shel is surprisingly low cal. You can use vanilla pudding and add some lime zest from a lime and turn it into a keylime pie. (or lemon). Otherwise chocolate works very well.

    English summer pudding has no fat. Use a sugar substitute if you prefer. Serve with low fat yoghurt instead of custard or cream. Easiest to use frozen berries.

    Creme caramel made with 2% milk. You will need sugar to make the caramel base, but in the body of the pudding you could use use a sugar substitute that doesn't break down during cooking, such as Stevia.

    In the summer I like to make this fruit salad:

    1 lb strawberries, quartered
    Small container blueberries
    Green grapes
    1 (16 oz) can pineapple tidbits
    1 (16 oz) can mandarin oranges

    Drain canned fruits. Mix all together, gently because the oranges will break. Let chill several hours or overnight. It's so yummy!

    I took 2 9x13 pans to a church outdoor gathering. It disappeared very quickly!!

    On the fruit idea, griddled fruit is a way of making fruit salad a bit more festive. You can do it indoors on a cast iron griddle pan.

    Another way I like to make fresh fruit festive (especially if it's not quite ripe enough) is to dredge in granulated sugar, place on baking tray and then torch with a blow torch to make a thin hard caramel coating. Slices of apple, whole strawberries, segmented citrus fruit with pith removed, sliced peaches and nectarines all benefit.
