Quick breakfasts on the go?

I'm a commuter and don't have a lot of time in the morning to make breakfast. I currently make smoothies the night before but I need to change it up a bit. Any recipes?

I usually just scramble some eggs and throw on some avocado and salsa...pinto beans if I've made a batch over the weekend.
Takes about 5 minutes to make and 5 minutes to eat...3 -
I've started meal prepping my breakfasts and it's actually worked out well.
Some ideas that keep well:
Greek yogurt with a banana and some chia seeds (usually add banana in the AM to prevent it from getting brown)
Cottage cheese with raspberry preserves
Make ahead oatmeal (cooked oatmeal with toppings in it already)2 -
I sometimes make crustless quiches on the weekend in a silicon (no stick) muffin pan. Single serve, pop in the microwave; easy to eat in the car5

Overnight oats and egg muffins are my go-tos. Overnight oats is 1/2 cup oats (old fashioned NOT quick or steel cut), 1/2 cup milk of your choice, stick it in the fridge overnight. I use mason jars for this, but you could use any tupperware that seals up tight. I add cinnamon and usually some flax seed or maybe hemp seeds. I add fruit in the morning, but you could just throw it in at night--blueberries hold up pretty well. I like it cold but you could easily warm it up at work or before you walk out the door. Egg muffins--super easy--whisk a dozen eggs in a big bowl, add whatever you want. I often do sliced up veggie sausage and peppers, spinach, whatever, plus some shredded cheese. Spray a muffin tin with spray oil, distribute the eggs into the cups-no papers needed. Bake at 350 until they puff up and look done. Again--I don't mind them cold but you could easily warm them up. Those I do on Sundays, obviously. Chia pudding is super easy too--3 tablespoons chia seeds, 1/2-1/3 cup some kind of milk. I love coconut milk with chia--put some shredded coconut and mango on top--tropical fantasy in a bowl!8

I hardboil eggs for the week..take two and mix with half an avacado and some salt. Super quick and easy.2

3 eggs bottle of water and black coffee does the trick for me.0

My first meal is usually a peanut butter and banana sandwich. Goes great with coffee.0

I make a roasted vegetable and egg casserole. It takes a little time to prepare on Sunday but only a minute or so in the morning.0

Cook egg whites (1/4 cup) in microwave. Put in whole grain tortilla. Add a slice of cheese.
Eat this and an apple pretty much ever morning.
Takes about one minute to make.
