    One of my favourite dishes a west African ex taught me

    Bit of oil in pan, add onion, garlic, ginger and chilli and sweat it
    Add sliced up peppers and cook a few minutes
    Add all purpose seasoning, tinned tomatoes and tomato puree
    Put 4 salmon fillets in and cover with sauce
    Turn heat to low and cover for 20 minutes
    Crack 4 eggs into wells made in the sauce and cover for 20 minutes

    Serve one fillet, one egg and sauce over plain rice per person

    Shrimp Saganaki (stolen from Pinterest). It is a Greek recipe. In Greece, they add feta cheese and tomatoes to everything and everything is delicious.

    Heat 1 tbsp olive oil in a pan. Saute' 1 chopped onion, about 5 min, then add 4 cloves of minced garlic and 1 tsp of red pepper flakes and saute'.

    Add 2 cups of fresh chopped tomatoes (homegrown is best) and cook 5 minutes until softened. Add 2 14.5 oz cans of Hunts Sweet Onion Diced tomatoes to the pan stir. Add 1-2 tbsp fresh oregano or substitute dried. Simmer 10 minutes. Add salt and pepper to taste.

    Pour in 1/4 cup ouzo or white wine and simmer about 10 minutes until sauce thickens. Stir frequently.

    Add 2 lbs fresh peeled and deveined shrimp to the pan and cook until opaque but not overdone.

    Transfer to a baking pan and add a generous amount of feta cheese and broil in oven until melted. Add fresh parsley to garnish.

    This is interesting. It does say they are eating predatory fish. The higher up on the food chain, the more mercury content of the fish. That is why swordfish and large tuna and dolphin have very high levels. They are apex predators and the mercury is concentrated in their bodies. Smaller fish like sardines and chunk light tuna have low mercury levels. Farmed fish like tilapia have low levels. Shrimp have low levels but sustainable wild caught or US farmed are lower in other contaminants than Asian farmed ones.

    I still used canned salmon solely for the croquettes my mom used to make, I really should get around to collecting a few more recipes.
