I need veggie filled recipes!!!!

So sense started to lose weight I’ve noticed that it’s easier for me to lose weight when eating tons of fruit & vegetables because I can eat so many with such low calories but I tend to get bored of the same old thing so I’m looking for recipes packed with vegetables. Right now my go to’s are salads, smoothies, stir fry’s and soups! But I really need some more creative ideas!!

casseroles, stews, chilis, curries, roasted, grilled, stuffed, crudites, in an omelet, steamed, pureed into a hummus.1

We enjoy a variety of roasted vegetables: butternut, carrots, cauliflower, eggplant, baby marrow etc. Add whatever spices and herbs you like, a little oil, some garlic and roast in the oven.1

Mexican stuffed veggies: stuff spaghetti squash halves, cucumbers, acorn squash, bell beepers, or zucchini with your favorite burrito filling. Bonus points if you include black beans or pintos in addition to meat.
I also like pulled pork baked potatoes or spaghetti squash, lasagna roll ups using zucchini or eggplant instead of noodles, Asian sesame peanut salads using carrot noodles or broccoli slaw mix as a sub for pasta, and my favorite roasted cauliflower coated in buffalo sauce.2 -
Ratatouille is my favorite. I not only like it, I crave it. As a bonus, it can look impressively stunning if you put in the effort but the classic chunky style tastes better because you get to sautee the veggies in oil and aromatics.
ETA: I make my own, usually, but Jamie Oliver makes a good one. It's nice because it has plum tomatoes instead of sauce:

My mom also makes the best vegetable spread which is great as a quick snack. Just spread on a slice of bread and you're good to go. It can be chunky, mashed, or blended, mainly eggplant or mainly summer squash, but always amazing. It's usually called "poor man's caviar". Here's one version. It's nice, but we usually like the addition of garlic:

Veggie lasagne, risottos, chilli, veg curries, paella, roast dinners (3-4 different veg), stuffed sweet potatoes, buddha bowls.
Even just simple things like changing how you cook a vegetable can make something appear new and you may find you prefer that way?0 -

Can you eat eggs? I love to throw together a bubble 'n' squeak. It's basically eggs scrambled with veggies. I grew up with it having cabbage, shallots and potato mixed in. These days, I just go by what's in the fridge. Lately, I've been loading my bubble 'n' squeak up with mushrooms, tomato, carrot, leeks, lots of baby spinach kale, that sort of thing.0

I make this all the time as a spread on bread. Absolutely amazing. I buy case of eggplant and peppers when in season and make a huge load of it. Portion and freeze in ziplocks. We call this poor man's caviar in Polish.
I'm half Russian, so it makes sense we have some dishes in common. Yes, it's absolutely amazing.0 -

Italian Grandma Soup:
Cube eggplant, tomato, onion, and zucchini
Add frozen or fresh spinach
Cook until tender, then add 1 box of low sodium Chicken stock
Add Italian seasoning and ground pepper to taste
Mushroom, Pea Pod, and Carrot with ginger sauce
Use a dab of peanut oil to soften veggies in a skillet
In a separate bowl, add 1 tbsp. Ginger Purée, 2 tbsp soy sauce, dash onion powder, another dab of peanut oil, and a dash of Chinese 5 spice powder. Whisk, then add to the stir fry.
Works with nearly any veggie. Good with summer squash and peppers too.
Serve hot, over rice, or plain if desired

The Sicilian version of ratatouille which I've loved since I was a kid. I use stevia instead of the sugar in it. I like to swap out the celery with a fennel bulb (finocchio). Pine nuts and raisins are also nice additions. Sweet and sour (agrodolce) is a frequent flavor combination in Sicilian cooking which has Italian, French, and Arab influences.

Calling it a "recipe" is a stretch, but for lots of veggies, you can't go wrong with fajitas. I like to make mushroom fajitas with lots of onions and peppers, and in the summer I throw in zucchini or yellow squash too. Just saute in a pan with some garlic and chili powder/taco seasoning and serve in tortillas with hot sauce (and a little guacamole if you have calories to spare!) They're especially good with Tabasco Chipotle sauce.1

This is my Veggie Overload "Spaghetti" recipe:
VEGGIE OVERLOAD “SPAGHETTI”
1 Tbsp Tuscan Herb Extra Virgin Olive Oil (or regular EVOO)
1 Onion, diced
1 medium bell pepper, diced
2 medium Zucchini, spiralized, juilienned or shredded in a food processor
2 large Carrots, spiralized, juilienned or shredded in a food processor
3 cloves Garlic, minced
10 oz jar sliced Mushrooms
1 can (15 oz) Tomato Sauce, no salt added
1 can (15 oz) Diced Tomatoes, no salt added - DO NOT DRAIN
2 Tbsp Tomato Paste
2 Tbsp Flaxmeal
1 Tbsp dried Basil
1 Tbsp dried Parsley
Salt & Pepper to taste
Nutritional Yeast (optional)
Crushed Red Pepper flakes (optional)
Saute onion and bell pepper in oil until translucent. Add zucchini, carrots and garlic and saute for about 1 to 2 minutes. Stir in remaining ingredients and heat through. Serve immediately with a sprinkling of nutritional yeast and red pepper flakes.1 -

Here's the cheat's version. Heat up a cup of frozen veg in enough water to make a bowl of soup. Toss in a tin of white beans or chick peas and a chopped tomato, skin and all. Add a stock cube. In your serving bowl stir in a large dollop of pesto. Homemade or from a good deli is best, but supermarket pesto will do.0
