Hi,
Today I'm cooking one of my favorite and healthy dishes: Cowboy Beans!
It's basically the 17 bean bag of dried beans
Diced mixed veggies
A bunch of spices- whatever you like really
6-8 cups of water in a crock-pot
Cook it all for a few hours- on High about 4 hours, on Low more like 6
When it's all cooked through, add bbq sauce to finish it!
Serve hot! You could always add stuff to make it tastier if your calories allow- hot sauce (most are calorie free), sour cream, shredded cheese.
I made it veg today- but you can always add ground meat to it
Yee Haw!!
I also experimented with an egg recipe that I dreamed up.
In a non-stick muffin pan I added diced veggies and one egg
Salt and pepper to taste
You could always add cheese or turkey bacon, etc.
They came out like pretty like crustless souffles!
They will be part of tomorrow's breakfast!

A yummy chicken salad. With spring mix lettuce, olives, carrots, beets, and little bit of seasoned croutons with ranch dressing....hmmm cant wait, its my first meal of the day0

I had left over grilled polenta and mushrooms with roasted chicken from last night for lunch and dinner is homemade chicken noodle soup!0

The husband and kid are going to a WWE event today, so I don't have to cook. I'm just gonna throw together a big salad. Leftover steak, romaine lettuce, tomato, cucumbers, blue cheese dressing and some cheddar cheese.0

I just devoured a cup of cowboy beans and they were fab!
I also demolished one of my egg muffins, which was also yummy!
I think I'll try to make my egg muffins agains- but this time egg whites and spinach!

For dinner tonight I pulled out one of my frozen tomato sauces'.... the fiance got penne with it ( I just ate a green salad) and then we both had grilled portobello mushrooms and baked chicken (I baked it with the tomato sauce)

i cook most everyday its my business today i cooked pressure cooked garbonzo beans i made a sauce with onions and tomato and added curry powder then added the cooked garbonzo beans simmered and delicious. You can definately save time by pressure cooking your beans first gets done in 30mins a couple of whistles invest in a good pressure cooker. I also cooked moong beans sprouted and homemade Rotis.0

I'm making a big ol' pot of spicy salsa soup with shredded chicken breast. Also known as "it's time to clean out the fridge and use up some leftovers" soup.0
