vegan lunches

any ideas for vegan lunches?? I'm making a meal plan and it's kind of got me stumped... most times it'll be last nights dinner just without the carbs ((e.g chilli with no rice)) you get me?? But on the days when I don't have that, what can I do? Non-vegan options welcome too, I'm quite good at manipulating them to be vegan. x

    I mostly do leftovers, too, or a soup/stew that I make on my day off and then eat all week. For that I especially like split pea, roasted tomato, lentil, or chili.

    Other things I've had for lunch:

    flatout wrap with hummus, lettuce, and tomato
    easy "salad" of canned black beans, canned sweet corn, and jarred salsa
    refried bean sandwich with sprouts, onions, and hot sauce
    tofurky deli slices with spicy mustard on a whole wheat sandwich thin
    chopped style salad with tomatoes, cucumbers, chickpeas, mushrooms, and thousand island dressing (I make my own with vegan mayo or sometimes I do a red wine vinaigrette)
    carrots, bell peppers, and cucumbers dipped in hummus
    sweet potato topped with black beans and smoked paprika

    I use Pinterest a LOT, and made a killer Pad Thai w/peanut sauce and tofu/veg's etc. I just split up the whole thing into 5 containers for the week and I'm golden! I do this with stir fry's lettuce wraps, etc. too. I don't have a lot of time to deal with lunch most days so this is easy and tastes great :)

    I just made myself 2 vegetarian Italian sandwiches and they were delicious. Each sandwich was made with 2 slices of Sara lee delightful bread (toasted), 1/2 a slice of Cracker Barrel pepper jack cheese, canned artichoke hearts, red onion mixed with balsamic vinegar and oregano, sliced tomato, sliced peperoncini peppers, leaf lettuce (I put leaf lettuce on top of each bread to prevent soggy bread from the other fixings). My son doesn’t like the peppers so he puts pickles on instead.
