Chicken annoys me to death. For something that's so good for you, the tastiest way to eat it is fried, lol! I usually cut boneless breasts into strips, lightly baste with BBQ sauce and grill.

You can also "fry" them in the oven. Again, I cut boneless breast into thin strips, then dip in egg whites or egg beaters. Roll in seasoned flour (black pepper, salt, whatever other seasonings you like), and lay on a pan lightly brushed with olive oil or sprayed with Pam and bake it up.

Another tasty one is to marinate in Wishbone fat-free House Italian dressing and grill or bake. Yum!

Here are some of my fav's
Snacks: Peanut butter and carrots; greek plain yogurt with fresh berries; protein shakes; almonds; just about anything Atkins; tomatos with Greek dressing

Chicken: any Mrs Dash, buffalo style on a salad, taco seasoning, chicken fajitas but wrapped in romaine leaves rather than tortilla, canned chunk chicken made into chicken salad. Chicken cooked in coconut oil on the stove is very easy and coconut oil is very healthy and only needs a small amount since it liquifies so much. There are tons of ways to make easy chicken!!!

You are going to have to find a few things that you cook and stick with them as you will find the most sucess preparing your own foods. We eat chicken at least 4 to 5 times per week. I cook chicken breasts and slice thinly for my husbands lunch sandwiches (with some dijon and havarti, he loves them), and for my lunch salads.
I have a cupboard full of spices and grow fresh herbs and just spice up our chicken completely differently so it seems like we are eating something new instead of the same old chicken breasts day after day.\
You have to play around to find what you like and you are willing to cook. The more you prepare and cook for yourself the better results you will see.

My only snacks are fruit, almonds, brazil nuts, 1 cup of dry cereal, or a few crackers topped with natural peaunt butter. I don't keep any snack food in the house as it is mainly garbage anyway.
When I have a rare craving for something sweet I will buy a small snack size of the nibs licorice, but try not to do that very often.

I snack on Sunsweet Pitted Dates, 5 or 6 at a time.
They are so soft and sweet its almost like chocolate.

I also drink diet soda(I know some think its bad), but I need to stay far more hydrated than most people.

    Hi Sandy,

I'm totally in love with my grill-pan for chicken. Spend a little extra to get a decent non-stick one (Caphalon makes a great one). You need just a touch of oil. Spice rubs are an awesome way to get low-cal flavor - and lemon pepper seasoning is super-easy. You can search online for spice rub recipes, or just look at the spice section of your supermarket for blends. Apply a spice blend to the chicken, sear the chicken on high-heat, both sides, then put it in the oven at 350F 'til it's done (10-20 min depending on the size of the pieces). If you cook a batch all at once, you'll have leftover chicken for salads.

As for snacks, I try to make sure to get a decent balance of carbs, protein and fiber. When I just have starchy snacks (like pretzels or fruit alone), I find I'm hungry soon after. Maybe that's just the way my body works. :) Celery filled with natural peanut butter or reduced fat cream cheese is good. Apples (or other fruit) and string cheese. Kashi's TLC bars are good, and so are Kellogg's Fiber Plus bars.

    Best wishes on your journey!

I snack on many healthy things, but I really like Cousin Willy's Sweet & Salty Kettle Corn. It tastes so good and a whole bag is like 140 calories.

Snacks: Fibre One Brownies, fruit, air popped popcorn, light cottage cheese with fruit
I hear you on needing good chicken recipes! For dinner I made Gina's Baked Chicken Parmesan, http://www.skinnytaste.com/2009/04/baked-chicken-parmesan.html?m=1 and it was DELICIOUS. Around 250 cals per piece, easy to prepare and enough leftover for lunch tomorrow! Did I mention it was delicious? And it's even already in the database!
Forgot to mention, LAUGHING COW is so amazing! I have it on Mini Breton crackers but it's so versatile. 100 cal Cocoa Roast almonds too or if you want something sweet and cold Skinny Cow makes some pretty amazing ice cream!
