As long as you are cooking with fresh ingredients, controlling how much salt you add by measuring with a scale and avoiding processed foods (olives, anchovies, salty cheeses, cured meats...) you're going to do fine. If you add some kind of processed food, you should read before how much sodium they have.
Other than that, the best way to make low sodium food taste good is by adding lots of spices: different types of pepper, paprika, dry/fresh chilli, garlic, herbs (rosemary, parseley, thyme, basil, cilantro, oregano..), ginger, cinnamon, cumin, nutmeg, lemon/lime...
