Hi y’all I’m looking to expand my recipie knowledge for yummy and nutritious meals! What’s you’re favorite and go to recipie??

    A healthy diet is balanced and varied. You can eat what you like. I eat so many different things and don't really follow recipes, and I have my own preferences, so I don't think I can help you with your question. Have you tried googling? If you have, head over to the recipe board and be a bit more specific, and I'm sure you'll get lots of ideas. This bump will also most likely spur on some new comments.

    My go to breakfast recipe:

    3 tbsp quick cooking oatmeal
    1 tbsp chia seeds
    1 bottle of yogurt (180ml for my choice brand)
    1/2 cup raspberries
    1 banana

    Blend them all for a high-fiber, filling, nutritious, delicious breaskfast smoothie.

    I make peanut butter banana chocolate chip pancakes every morning because my kids like them (as do I). 1.5 bananas, 2 eggs, 1/4 tsp baking powder, 2 tbs pb2 then a sprinkle of mini chocolate chips when cooked but hot to melt them.

    Greek “pizza” - flat out wrap baked until crispy (I don’t like them soft). When cooled a bit then top with hummus, cucumber, tomatoes, olives and feta.

    I will cook 2 of the following each day: (when roasting I do 425 until brown bits)

    -roasted carrots (olive oil and salt and pepper)
    -roasted broccolini (garlic, olive oil, salt and pepper)
    -roasted asparagus (olive oil, pepper, Parmesan)
    -boiled corn on the cob
    -roasted cauliflower (olive oil, salt, pepper)

    Burgers -all beef burgers topped with lettuce, onions, tomatoes, dill pickles, catchup, mustard but on roasted portebello mushrooms instead of a bun (eat with a fork and knife)

    My kids gobble up sweet potatoe brownies made in mini muffin tins: sweet potato mashed up, cocoa, peanut butter, maple syrup then a raspberry pushed in with a couple of mini chocolate chips

    Mini pitas topped with cream cheese and chopped mixed veggies ie. broccoli, celery, tomatoes, carrots, onions, cucumbers, cauliflower, peas

    Fried cauliflower rice -I buy a bag of cauliflower rice from walmart and add celery, broccoli, carrots, mushrooms, peppers, onions. Then add cooked scrambled eggs, soy sauce and a few pieces of bacon mmmm. Roast the veggies first,

    Lasagna rolls - I make sauce from 2 jars pasta sauce, 1 can tomatoes and the following veggies: celery, carrots, peppers, onions, mushrooms, zucchini shredded. Then put sauce/cottage cheese in the cooked noodle and roll them up. Put 9 in a pan, put more sauce on top and top with a bit of cheese and bake.

    I like to make fried rice with mushrooms, zucchini, broccoli, any combination of those. Sometimes avacado and pineapple is nice with fried rice too. Sometimes I like to sprinkle dried seaweed on top or make vegan 'scrambled eggs' (real eggs work too)

    I found this yummy balsamic vinegrette recipe and I'm totally addicted to it. I pour it over chicken, greens, tomatoes, quinoa or barley and julienne carrots. Or tuna and black beans. The sky is the limit!
