Vegan or vegetarian meals

I am looking for ideas for low calorie/ high protein vegan and vegetarian meals. Seems like there are a lot of good breakfast ideas, most of which include meat and eggs. I have been vegetarian for over 2 years but never really counted calories. Not eating meat and limiting the amount of processed foods has been an amazing change for my life long migraines. I have discovered what I eat, is how I feel. The triggers I avoid, to live without daily preventive medicine. So now if I can find more recipes for low calorie plant based proteins. Thank you for reading in advance.

    Breakfast: tofu scramble w/veggies, oatmeal with berries and some vegan protein powder, or a smoothie with fruit, veg, nut milk and protein powder.

    Otherwise: rice with beans, tofu stir-fry, lentil curries, pretty much anything with seitan, legumes, and tofu would be higher protein than those without.

    For breakfast I love overnight oats with soy milk and coconut yogurt. I also add in chia seeds. I love vega protein powder as well. I eat a lot of Mexican style dishes so a lot of beans and a lot of quinoa as well. Feel free to add me. I have an open diary and would love more vegetarian friends on my feed :smile:

    For breakfast: Dinner leftovers. There's no law that breakfast has to consist of specific "breakfast" foods.

    Moujadra. To reduce work and cleanup I wouldn't bother with the deep fried onion. Mix some sauteed onion with ready made deep fried shallot flakes you can buy at the asian supermarket in the SE Asia section.

    I like making mixed bean burritos, Moroccan style chickpea stew, veg & lentil/barley soup, brown pasta with (free from) pesto & veggies, even just baked beans on wholegrain toast! :)

    Protein smoothies or overnight oats are my go to breakfasts, both are about 300 cal. My smoothies are a plant based protein powder, a banana, almond milk, spinach and ice. If I want fruit, I add some frozen blueberries. I put everything in a blender and process until I can't see any spinach bits.

    Overnight oats are rolled oats, almond milk, almond butter, maple syrup, chia seeds and some fruit (banana and cinnamon, apple and cinnamon, cherries, strawberries or blueberries). I make three at a time, but don't like to leave them more than four days in the fridge.

    On weekends when I have more time, I saute whatever vegetables I have and add some tofu to the pan. I add nooch and sriracha once its plated.

    Roast an eggplant (I slice it in half and put it on a parchment-covered baking sheet) and some cut up red bell peppers together (I set oven at 425F for about 45 min to an hour). While it's still hot, chop some of this up in a bowl, mix in some cooked tempeh, cubed (I usually use half a package of Lightlife tempeh) and about 3T of your favorite hummus (my favorite is a very rich, locally made brand). I love this so much I've been eating it every day all summer!

    Sometimes I make this as a sandwich on whole wheat pita, sliced horizontally into two thin rounds (and toasted in the oven toward the end of cooking the veggies).

    I recommend this recipe, but I also encourage you to research the truth about your protein needs.

    This recipe, when I made it with bulgur wheat not seitan, had about 167 calories per cup.

    i love morningstar farms soy "meats". they have veggie bacon, veggie sausages, chikin nuggets... fairly low calorie too and delicious
