Hi!! I’m a full time student in university, and I have such a hard time making meals for just me, do you have any easy recipes for one? Or good crockpot recipes I can freeze and easily take out each day, I can do chilli.. but my creativity doesn’t go much further. I’m trying to be as healthy as possible.
Thank you!! ❤️

Vegan student here!!!:). Soups and easy one that can be frozen - so like red pepper and lentil, carrot or leak and potato. One pot bolgaise or chilli that can be frozen and all you have to do it cook rice / pasta. Smoothies / fajitas / Stir fries

You can also use the crockpot for big batches of homemade spaghetti sauce, dried beans, bean soups...all of which freeze well. I have a pile of freezer bags full of plain beans, spaghetti sauce, and vegetarian chili.

I do a lot of large batch cooking and will freeze a single portion sizes for the coming weeks. Grab and go makes it so much easier when you are busy. Using the recipe builder on this site makes logging easy.

Budgetbites.com is a godsend. I use it to feed my family of 4 and it is mostly made for one person.
