Chicken Baked in Mustard
1lb skinless, boneless chicken breast
1/4 cup mustard
1/2 cup bread crumbs
1) Preheat the oven to 400 F.
2) Cut the chicken into 4 equal pieces and pat dry w/a paper towel.
3) Brush the mustard onto both sides of the chicken. Roll each piece in breadcrumbs,
coating thoroughly, and then gently shake off the excess. Place on a baking
sheet coated with non-stick spray.
4) Bake for 20 minutess, or until done.

Thanks for sharing! I never thought of using mustard as the "sticky" for my oven baked chicken. I had been using olive oil or egg, but mustard would be much tastier!0

Try English Mustard. . . . it makes it a little spicy. You can all add some herbs to the breading to give it more flavor and keep it low calorie.0

Very yummy! Thanks for sharing. I used to do a similar dish at a bistro I worked at once upon a time. We put panko and parsley in a food processor and blended it. Then we brushed lamp chops with mustard and then dredged them in the panko/parsley crumb and baked them.0

Another suggestion:
Mix a little Catalina/French dressing with the mustard with a tad of Worchestire sauce for a little kick!0 -

mustard is awesome to use to hold on a breading material. i use crushed smartpop popcorn & a dijon mustard... sometimes on the 'breading' i add in crushed nuts as well for more protein (almonds are good and so are pecans)0
