I make this chicken dish that always goes over as a big hit. It's really easy to make and you can change the ingredients to taste (or based on whats laying around...)
Chicken Teriyaki with Peppers and Pineapple
Ingredients (Per Serving)
-1 boneless skinless chicken breast
-2 rings of sliced red bell pepper
-2 rings of sliced green pepper
-2 pineapple rings
-2 rings of sliced red onion
-teriyaki sauce, about 1/4c
-salt and pepper
Take a length of aluminum foil. Place chicken breast in the center. Season to taste with salt and pepper. Arrange slices of peppers, onion, and pineapple on top of the chicken breast. At this point I recommend folding the aluminum up into a boat shape around the chicken. Pour teriyaki sauce over tthe top of the chicken and veggies. Fold the aluminum over the top and wrap tightly. I suggest taking a second length of foil and wrapping around, to keep juices securely inside. Allow to set in the refrigerator for up to several hours. Bake in the oven at 350*F or grill on a bbq grill for about 30 minutes. Time will vary based on thickness of chicken, individual ovens and grills. Be sure the chicken hits an internal temperature of 165*F before serving.
