Delicious vegan blueberry muffins =]

Edit: Nutrition facts for how I made them: 185 calories, 2.5 g fat. 3 g fiber per muffin! Recipe makes 12 muffins



so i still have a ton of berries from going berry picking so I made these:

Ingredients:
2 cup flour( I used whole wheat)
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder

3/4 cup sugar/honey/agave...( I used organic cane sugar)
1/2 cup applesauce, unsweetened
1/4 cup soy/rice/almond milk.. ( I used coconut)
1/4 cup coconut oil
1 T water
1 packet true lemon
1 1/2 cup frozen or fresh
Blueberries

Preheat oven to 350
Grease muffin tin or use paper muffin sleeves
Sift together dry ingredients
Add in all wet ingredients besides blueberries
Mix until all moistened , and then slowly fold in berries

Bake at 350 for 20-30 minutes. Mine took about 25 mIns, the hint of lemon is so good! Hope you enjoy
