Any other Disc Golfers out there? If so, and you were in here to lose a good amount of weight, did you notice a change in your throw form? How did you compensate or adjust for these changes?

I used to play on a regular basis, but I no longer play so I can't say how it impacted my form. I suppose a large amount of weight loss would shift the center of gravity. This isn't anything to be concerned about.
Losing a large amount of weight takes a long time. It could easily take a year, two years or more depending on how much you have to lose. Assuming you continue to play while you lose weight you will make minor adjustments along the way. You're not going to wake up one day and your center of gravity has had a major shift. It takes time and patience.0
