Salsa Meat Loaf
Serve meat loaf with a little sass. High-fiber cereal and salsa as hot as you like sets this meat loaf apart.
Prep Time:15 min
Start to Finish:1 hr 40 min
Makes:6 servings

1 cup Fiber One® original bran cereal
1 cup Old El Paso® Thick 'n Chunky salsa
2 eggs
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 lb extra lean (at least 90%) ground beef
1/2 cup Old El Paso® Thick 'n Chunky salsa

1. Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
2. In large bowl, stir together cereal and 1 cup salsa (mixture will be thick). Let stand 5 minutes.
3. Add eggs, chili powder, cumin, salt and pepper to cereal mixture; stir until blended. Add ground beef; stir until well mixed. Press evenly in ungreased 9x5-inch glass loaf dish.
4. Bake uncovered 1 hour 5 minutes to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cover; let stand 5 to 10 minutes. Drain and discard liquid before slicing. Serve with 1/2 cup salsa.
High Altitude (3500-6500 ft): No change.

    I'm picky about meat loaf, but that sounds good!

    Thank you for the recipe, I always struggled putting bread crumbs in my meat loaf. Fiber One is a great idea. I can't wait to try it. :smile:
