Baking with pumpkin

I've tried googling recipes for cakes/breads using the pumpkin "flesh" I'll have left over when my kids care pumpkin heads on sunday. But besides a ton of recipes for pumpkin pie, I dont seem to be able to find many recipes NOT containing:
pumpkin spice mix
or
cake mix
or
canned pumpkin
I live in Denmark, where we dont have as much convenience food as it seem U.S has, so I'll be cooking using fresh pumpkin, and nothing ending on "mix"
Can someone help me with pumpkin recipes?

I live in France so when any recipe calls for canned pumpkin or pumpkin spice mix, I'll roast and puree my own pumpkins and create a similar spice blend. When you ask for recipes with none of these options, do you mean you don't want recipes with this spices either? Below are some pumpkin recipes in different styles, more or less healthy, that I like:

Thank you It's not that I dont want the spices....I just dont know what that spice mix contains.
And it doesn't have to be particularly healthy either..I just hate wasting food, so I thought I would make soemthing of the pumpkin parts0 -
You can also use pumpkin by chopping and peeling the pieces and throwing them into a stock with onions and garlic and boiling until the flesh is very tender. Then puree and make a soup. Add curry spice for flavour and a little salt. Makes a great soup!

Despite living in the US, it isn't uncommon for me to make my own pumpkin puree instead of using canned pumpkin. Essentially just cut the pumpkin in half, roast it as you would any winter squash, and scoop out the flesh. You don't need to mash it or put it through a food mill.0

Curried pumpkin (Trinidadian style) is awesome.
I put some in my homemade chili and it goes good in soup
Canned pumpkin can be subbed for mashed roasted fresh pumpkin cup-for-cup0 -
Oh and in terms of pumpkin recipes -
Smitten Kitchen's pumpkin bread (note it calls for a fair amount of sugar but it's also a massive loaf of bread) is my typical go to.
Thai pumpkin curry is good and wouldn't require you to roast the pumpkin. I'm not a big fan but there are plenty of recipes out there for pumpkin gnocchi and you could also make pumpkin ravioli.
As far as pumpkin pie spice, it's essentially cinnamon, cloves, nutmeg, ginger, and allspice. The first recipe doesn't call for it by name, but the spices that are called for are all in pumpkin pie spice. I'm also pretty sure that the last time I made the pumpkin bread recipe was when I was in Germany and I ended up just roasting a kabocha squash. It was a big hit with the people I was living with.0 -

The most popular pumpkin spice combination (Libby's pie recipe) is cinnamon (1 t.) ginger (1/2 t.) and cloves (1/4 t.).
Aokoye is correct. Just bake the flesh, mash it, and you essentially have pumpkin puree. Cans of puree likely have salt added (but nothing more).2 -

Thanks all. I'm not really limiting myself to baking - i have a tone of savory recipes using pumpkin (pumpkin and pasta being my favourite), but I have only 1 or 2 baking recipes.
My daighter loves the roasted seeds as well, so we always make those

Had Thai Panaeng Curry with pumpkin substituted for the Kabocha Squash in the original recipe for lunch today. Very good ... but kind of high in sodium from the curry paste and fish sauce.0
