Fennel recipes

Does anyone have any tasty recipes with fennel as a main ingredient?

I thought it was celeriac when I bought it from the market :blushing:

    Oooh I love fennel! My mum used to bake it in a paprika sauce (white sauce with paprika added!) but I like it thinly sliced in salad. Really nice brushed with olive oil, baked and served with baked white fish.

    I got some in my veg box and had to really hunt for ideas. Got this from ottolenghi:

    (warning, this may not be classed as a 'diet' food!!!)

    slice tops of and save for garnish

    slice lengthways about 1cm (1/2 inch) thick

    gently fry in butter until turn golden, remove from pan

    add fennel seeds and teaspoon sugar, salt and pepper to the pan to caramelise

    return fennel to the pan and cook for a little longer - at this point I add some finely chopped garlic

    serve as part of a warm salad

    pretty good actually, and for me it takes the edge of the overpowering fennel taste. I think also roasting the whole bulbs is recommended.

    Yes! I could take or leave it raw but I love it cooked. Slice in finely and gently cook with chopped carrots, garlic and onions and use as a base for any Italian sauce or soup like Bolognese or minestrone.

    I like it really finely sliced raw. I used to have it with pan fried fish. You make a dressing with olive oil warmed in the pan with white wine vinegar, garlic and maybe a dried chilli, capers, lemon juice and herbs like parsley. you place the cooked fish on the fennel and pour the warm dressing over. It's quite sharp but I like that!

    I think it's also really nice baked in a gratin but not made it like that since MFP...

    wow that looks lovely - have some dill kicking around in the fridge and was wondering what to do with it!

    I love roasting it. Toss with olive oil, salt and pepper, and pop it in the oven at a high temperature, stirring now and then, until it gets nice and browned.
