Looking at the photos, you've sacrificed fat and protein for the carbs in veggies, which for an epileptic isn't what you want to do. The good news is that what you've gained is most likely water weight. Minimize or eliminate your use of tomatoes, onions and peppers. Those are high carb. Even low carb veggies, like the cauli-rice in that photo, can be too many, such as that cauli-rice. A serving size is no more than 4 ounces (1/2 cup). You have several days' worth of cauliflower on that plate, and that's for those that are doing a weight loss version of keto, not a therapeutic version. Remember that in general, keto friendly veggies are those with leaves.

Since you're supposed to be eating a therapeutic ketogenic diet for epilepsy, your macros will be different than those for weight loss. A therapeutic version of the ketogenic diet consists of a higher fat intake of 90% fat with an absolute minimal amount of carbs and protein. There are under 2% carbs in this “hyperketogenic” variation. Therefore you need to MINIMIZE your vegetable intake, not increase it.

That's what I did previously. But then made a post on here that I wasn't satisfied because I'm a volume eater. The people who commented recommend increasing non-starchy veggies. I was still under and/or at maintainence (depending on the day). I'll often get the prepared bags of riced cauliflower and containers or bags of leafy greens, etc so it's easier to scan/measure. My net carbs are still very low. When I do use onion/tomato, it's minimal. Majority comes from lettuce, spinach, and riced cauliflower. Net carbs are 1-2.

That's definitely a gastroparesis food baby stomach. Fibre is very bad for a lot of us with GP. Maybe it's aggregating it?

Even when on medicine it's still bad?

Depends on how well the meds worked but yes for me. I pretty much failed all the meds though and just got a j tube so I'm not necessarily a good example. My stomach looks like that after eating.

given this post just over 2 months ago, it looks like there's some serious crash dieting going on, maybe that's whats causing the crazy weight gain?

Crash dieting is eating barely below maintainence? I eat 1500-1600.

2 months ago you were 20lbs overweight... and now you have gained another 20lbs? your pics are not of someone 40lbs overweight....

That's what worries me even more. I know its not muscle. After reading the other comment of the mentioning of "food baby" it really concerns me. I don't want my intestines to rupture.

Even though technically my gastroparesis has resolved, if I ate a whole plate of cauli-rice or a bowl of raw broccoli right now, my stomach would blow up like a basketball and it would be a week before I could eat or poop again. My understanding with the meds is that they aren't a free pass to eat huge quantities of everything that directly triggers GP (like cruciferous vegetables!)--they just give you some "wiggle room" day to day.

This is good to know. Thank you.

This seems like something you should take to your doctor asap.

After reading these comments, I plan to now.

OP- I bloat when I eat milk products, and too many in a day distend my gut. I've cut down a lot on cheeses, cottage cheese, cream cheese, sour cream, etc. Parmesan Cheese has less lactose, so I use that in limited quantities. I do still use whipping cream in my coffee, but limit to 2T at a time. When I cut back on milk products my weight started dropping again. After my bullet-proof coffee in the morning, I eat every 3-4 hours between 11a and 8p daily to keep satisfied and spread out my carbs/protein/fats throughout the day. I am on 1268 calories a day (carb 5%: Protein 20%: Fat 75%).
Too may low/moderate carb items in one sitting will actually cause my blood glucose to spice and then drop rapidly (hypoglycemia) and I feel awful.
As to issue of hunger: I am accustomed to eating at night/ a few hours after dinner (some habits are hard to break), so when I am hungry, I nosh on sugar free jello and sliced salami w dill pickles and mustard. EVERYTHING I put in my mouth goes into Myfitnesspal and is tracked. I agree with the earlier poster, reduce tomatoes, onion, peppers, carrots. Increase your liquids to flush out the water weight gain.

I am a volume eater as well. I know if I get a little irregular, my trends will spike. Then slowly come back down over a couple weeks. Nothing like yours though.

In order to gain 20 pounds in a month, you would have had to add an additional 70,000 calories. Not likely you ate an additional 70,000 calories in vegetables. Did you gain actual weight on the scale eight or are you just bloated from gas from eating a lot of veggies?

Nothing like asking strangers about your health concerns on the internets when a dozen of legit, accredited doctors are nothing more than a walk away..... first world problem.

Also, I call BS on you gaining 20lbs in a month from veggies.

    1. Nearest doctor is a long drive from where i live
    2. I have no car (ex boyfriend stole it)
    3. Am currently medically restricted from driving
    4. I have limited insurance (one that many doctors don't take)
    5. I did call a doctor that takes the insurance and soonest availability is a month
    6. Wanted to know if anyone here has been through similar and what they did about it

Not sure why you're viewing things black and white? The circumstances are different among everyone.
PS- I did end up getting a hold of my pastor, (is friends with my father) who took me to the ER very early this morning. They ended up giving me a suprep and am now feeling better and over 10 pounds gone (lots of bathroom trips). Apparently I was severely impacted. I will see my doctor in a month though. Just have to find a way to get there.

Make sure your doc doesn’t rush you. I understand the struggle to find and get in to specialists(I am in Manitoba so I have distance, wait times, refusals to refer, I so get you), maybe call ahead now and explain that you may need some extra time to talk about appropriate foods to not aggravate your condition, and what to do and how to deal with issues specifically when things are not moving along. Ask for the referrals you need to dieticians who have dealt with the condition or any other docs you may need as well and confirm when you should be seen again.

I hope you feel better soon!!
