Hot Smoked Trout Lime and Spinach Kedgeree

Recipe for 2

2 hard boiled eggs
150 g basmati rice (350 g cooked)
150 g smoked trout fillets flaked into pieces
8 cardamom pods
2 tsps Mustard seeds
6 Spring onions sliced
tablespoon oil
2tsp mild curry powder
handul of baby spinach
Lime/lemon

Fry spring onions in oil with mustard seeds and the cardamom pods.
As they soften add the curry powder. I probably add a couple of fresh green chillies or crush some dried red chillies for heat) Add in the cooked rice and coat it with the spices and onions and then add the flaked fish. Season with salt and freshly ground black pepper and squeeze in some lime.
Stir in some washed baby spinach and let it wilt.
DIsh out and place the quatered hardboiled eggs on top. Season and add more lime juice to suit your taste.

Works at around 450 calories (original recipe was for 4 but I need more of this) You can pad out with extra veg - some broccoili florets or garden peas.
