Mini Egg, Sausage and Spinach Omelettes for on the go

I came across this recipe and have made them twice already. They are so good and can be made the night before for a quick and healthy breakfast on the go. Yields 12.

Ingredients:

9oz. turkey breakfast sausage, crumbled into small pieces (I used Jimmy Dean Turkey Sausage crumbles)
1 cup shredded colby jack cheese
6oz. frozen spinach
4 eggs
3 egg whites
1 cup milk


Directions:
Preheat oven to 325°F.
Spray muffin pan with non-stick spray.
Heat a large nonstick skillet over medium-high heat; add sausage and cook 6 to 8 minutes
Transfer to a bowl to cool.
Whisk eggs, egg whites and milk in a medium bowl.
Divide the egg mixture evenly among the prepared muffin cups and add 1 tablespoon of sausage and 1 tablespoon of spinach into each cup.
Sprinkle with cheese.
Bake for 25 minutes; let cool for 5 minutes.
Refrigerate up to 3 days; microwave for 45 seconds.
