Can anyone recommend any websites/blogs/books with good veggie recipes? I feel like I’ve been making the same 8 meals over and over and need some variation to keep me motivated!

I've been a veggie for a while and my favourite site is BBC Good Food - https://www.bbcgoodfood.com/ . There are loads of Veggie/Vegan recipes but a lot of the time I use whatever recipe takes my fancy and replace the meat with something veggie - tofu, fake meat, sweet potato, aubergine, cauliflower, halloumi etc. I love the Spiced Carrot and Lentil soup, its soooo good and easy to make.2

I really enjoy budgetbytes.com. Her recies are easy and delicious. Pretty much all of her tofu recipes are in my rotation, as well as the lemon asparagus pasta.
I also love so-called “Buddha Bowls.” If you google that, they are a ton of recipes.1 -
Thanks guys, great recommendations!! BBC Good Food is a great website, will need to have a good look through. I haven’t really used tofu - I’m not quite sure on the texture? Any tofu cooking tips??1 -
I like baking tofu to give it a crisp exterior without a lot of muss and fuss. I use extra firm.

Tofu works well in a marinade. Most recipes I have call for pressing it (between 2 cutting boards with a weight on the top board) for an hour to get the excess moisture out.1

My family is all omnivores but many of us own and love the "Moosewood Cookbook". The original uses lots of cheese, which was probably the inspiration for "Moosewood Restaurant Low Fat Favorites", however, none of those became my favorites.
These may be available in your library system, but if not, there are surely other vegetarian cookbooks available. When I'm thinking of buying a new cookbook, I like to get it from the library and test drive it first.1 -
Thanks everyone! Feeling motivated to get searching for new recipes Tonight was roasted butternut squash salad with sunflower seeds, spinach and feta! A new one in our house so it just helps to keep the motivation up. Thanks for all your suggestions!1

Can you eat gluten?

It was very easy to make. 20 minutes to prepare, and then just steaming for an hour. Can put it in a wrap with anything else you wish, or eat it like a roast, etc.
I haven't tried this one yet, but I've had butternut squash mac and cheese from a restaurant before and liked it. Seems very simple to make too, and has good reviews.

BBC Good Food is so good! New recipes all the time. Recipes are in GRAMS rather than cups/tbsp/handfuls or whatever confusing inaccurate measure. And you get just the recipe not the creators life story!1 -
I made the butternut squash "cheese" recipe tonight. Hard to give a completely fair review*, but I thought it was good but not amazing. Of course it's all personal taste.
*If you make it for one person, don't cut the recipe in half. I cut ingredient amounts in half, but then found myself having to put more milk in which probably altered the taste a bit.0
