What veggies go well with Apricot Cilantro chicken and cousc

I got an awesome coupon for World Market that let me get $10 worth of stuff for free, so I took the opportunity to try something new. I got a Moroccan Apricot Cilantro sauce and some couscous. I'm going to cook it with chicken for my mom and I when I go home later this week, but I'd like to add some veggies. She doesn't like mushrooms or carrots, but what veggies would be good with that kind of sweetish sauce? I've never had Moroccan food so I have no idea what would be best.

    Steamed asparagus, broccoli, cauliflower...maybe a nice spinach salad or even steamed green beans with a spray of butter and dill. :)

    Asparagus and summer squash is the answer to every "What veggie..." question. Ever.

    A quick search pulls up lots of squash-like veggies - pumpkin, squash and zucchini. I'd bet you'd also do well with onions, bell peppers and celery - chopped, sauteed and added with the couscous. Just my opinion. Good luck!
