How do you avoid gaining back the weight after a water fast?

You don't. Your total weight isn't just comprised of fat; it's also water, food and waste. Hence why fasts of any kind are just not recommended as a weight loss "tool" - it's not true weight loss given that you will inevitably go back up once you start putting food back into your body.21

First step, don't do a water fast.
The vast majority of the weight loss from a water fast is from emptying your bowels and glycogen depletion. As soon as you eat again you have food in your bowels and your body replenishes the glycogen.28 -
Lol. You can't. That's one of the reasons why water fasts are not good methods of long term weight loss.18

Given your other posts about bingeing, resisting temptations, losing fat even though you are already skinny and now this, you seem to have a pattern of obsessive behavior when it comes to food and your body image. Water fasts to any degree are extremely unhealthy. I highly suggest you seek help outside of MFP that will give you proper guidance regarding your health/nutrition.33

During your water fast you are probably not ingesting much sodium which means most of your scale weight loss is water. The other component is food waste and since you are not eating anything new your bowels will probably not have much left. The least amount of anything you are actually losing is fat weight because there is a maximum amount that your body can metabolize each day before it turns to burning muscle to make up for the energy you need which is NOT what you want to happen.
Once the fast is over your water levels and weight will return to normal if not slightly elevated because of the stress you have placed on your body. As you eat your bowels will resume moving waste along at a nice slow pace so you will regain that weight as well. The fat and muscle weight loss will remain gone but it will likely not be enough to really show up on the scale.
This is why a water fast is not really worth it as a weight loss tool.13 -

Just eating afterwards.... healthy doesn't have anything to do with it. Sorry, but you wasted your time when you could have been eating food and just sticking to your deficit.8 -

Yes, I agree that water fasts are a complete waste of time, put undue stress on your body, and mostly achieve temporary weight loss through depletion of glycogen and your digestive tract being empty. Please stop doing this to yourself. It isn't accomplishing what you seem to think it should.
What are your stats - height, current weight, goal weight?7 -

There is absolutely nothing you can do to prevent it. The only weight we can lose permanently through any weight loss method is fat and muscle. Fat is what you want to lose and it takes time. When you try and rush it you will lose muscle too. If you try and rush it for too long you will suffer even worse things like your hair falling out.
I am concerned that after my previous explanation you are still fixated on the number on the scale. I think it is time to schedule a visit with your doctor because you may have an eating disorder.

If you fasted long enough to lose 1 pound of fat, then no you won't gain that 1 pound of fat back if you continue to eat within your maintenance calories. It's always about calories, not they type of food.
But as bpetrosky pointed out everything else will come back.
With a water fast your bowels become empty, not true when you eat food.....ANY kind of food. Your body stores glycogen for energy, when you eat food (again it doesn't matter what type) your body replenishes those stores.1 -
I think that the OP and the "clogged up" lady need to get together.6
