Hi Everyone, I need some help with recipes. I am tired of eating frozen black bean burgers, Amy's enchiladas and canned soups. Please share any recipes you may have.
Sincerely,
A burnt out mom

These quinoa patties are one of my favourite go-to vegetarian recipes! They’re pretty easy to make, and I make them in bulk, freeze them, and then pull them out ready to go. My meat eating family is pretty fussy about vegetarian food but they all love these patties too.... you can serve them with different kinds of sauce and also change the herbs around to add flavour and versatility

I’ve also been experimenting lately with marinated tofu, which I generally eat in salads or with a plate of veggies. There are so many suggestions online! Hope this is helpful... I’ll be hanging around to see what others suggest!0 -
Mejadra. Don't bother deep frying the onions. Combine some pan fried onions with some ready made fried onions.

I'd characterize my cooking as low-effort vegan, so it's not fancy, but if you are burned-out, maybe that's the kind of cooking to try... My favorites right now are chopped, roasted Brussels sprouts, Butternut squash and Pink Lady apples (on parchment, no oil), lentils cooked in broth/water with shredded cabbage and fermented cabbage/sauerkraut stirred in before serving, frozen banana-powdered peanut butter, unsweetened cocoa powder and a splash of unsweetened soy or cashew milk nice cream, whole wheat pita microwaved and topped with almond butter and Pink Lady apple slices, kale/spinach salad with either a homemade agave/mustard dressing or Daiya ranch style dressing, and russet potato sticks, roasted on parchment/no oil, dipped in ketchup or the Daiya ranch dressing. Sometimes I eat frozen grapes, blueberries or cherries as a snack.0

I recently made this recipe http://makingthymeforhealth.com/one-pot-chickpea-tiki-masala/ and thought it was super delicious! I'm looking forward to trying more recipes by this bogger.0

I’m following this forum. If anyone has ideas about high protein, low carb vegetarian and pescatarian recipes, I’m all ears. Thanks in advance.1

Grilled mackerel with grated daikon radish and soy sauce, plus salad of peppers and cucumbers with ginger dressing.
If the kids don't go for mackerel, almost any fish can be quickly and deliciously grilled in a little olive oil in a pan on the stovetop, or baked in the oven. Add a salad, baked potato or sweet potato, and you're good.
If you eat eggs, throwing a couple of poached eggs on top of whatever veggies you're having is an easy way to add protein.0 -
Tonight I am making a cauliflower veggie fried rice and maple soy salmon. I've been making a lot of lentil dishes recently too.0

I made this yesterday and am enjoying it for lunch today. Cauliflower lentil rice bake.

My favorite pescatarian recipe is Tilapia 🐟Veracruz : https://pin.it/5iztaij4uep6qd
The recipe is super easy and if you don’t like olives or it’s saltiness just replace them with garbanzo beans that’s what I do (t avoid salt)1
