There were very few veggies I'd eat as a kid, but I always loved the squash my mother would fix at thanksgiving.

My favorite squash is a variety called acorn squash, and I prepare it pretty simply: I cut it in half, scoop out the seeds/guk (ice cream scoop works awesome for this) and very lightly oil with butter and then just a teaspoon of real maple syrup in the cavity and it gets put directly on the rack in the oven at 375 for 30 to 45 minutes.

I can't believe I forgot about how awesomely delish it is.

Whats your favorite type of squash, or veggie if you're not a squash person?

    Are circus peanuts a veggie? If not I will go with corn on the cob.
  • Zucchini sauteed with tomatoes and onions - using olive oil, salt & pepper... Delicious!

    My mom made this for us too and we would each eat a half a squash...I make it now for my hubby and I. Good food and good for ya!

    Baby yellow squash and baby zucchini, shredded and sauteed in a tsp. of olive oil with a couple of cloves of fresh garlic, chopped fine... finish it off with a sprinkle of Parmesan cheese... yummy!

    My mom makes this awesome zucchini dish. She takes the zucchini, puts it in a pot with onions and butter and lets it steam. She then puts parmasan cheese on it. Freakin awesome! I've modified it a bit to include mushrooms and a lighter butter but it's still the bomb.

    Luckily my siblings and I were big veggie eaters growing up - we ate raw broccoli and cauliflower as a snack - so my mom always made some great veggie dishes, including an awesome veggie soup!
