Lentils for breakfast?

I'm not familiar with lentils outside of a soup realm. I've decided that I want to really increase my protein intake without shaking it up because I like to eat my caloires. I'm adding 200 calories per day of protein to my 10:30 AM snack and was thinking that I'd like to make it primarily vegetarian based (not soy, due to allergy) and through research have found that lentils are seriously high in protein (open to more not soy gluten free protein sources too). So . . . ideas?

    I rinse out a can of lentils, add chopped tomatoes (with the juice), chopped parsley, pepper, salt (a little), olive oil and balsamic vinegar. Yummy!

    I make lentils with sauteed onions and homemade chicken stock - SO GOOD. It made me love lentils. I play around with different spices, but usually when I use the green lentils (French lentils) I use "herbs de Provence" and it works beautifully.

    The wonderful thing about any food. You can eat it when you see fit. Lentils for breakfast is very interesting and now you have me thinking about it. I'm not a huge bean eater, but lentils are easy in so many ways-- cook time, eating, taste, etc. Go for it. I think you have such an idea we can learn from.

    I like to saute lentils with chopped spinach, minced garlic, and chopped onions in a little olive oil. I have eaten it for breakfast, but this is coming from someone who will eat leftover stir fry at 7 am. I don't get hung up on eating certain foods at certain hours!

    It's funny that we question fueling our bodies with something great like lentils in the AM, yet it's totally normal to have 800-1000 calories at breakfast be it from McDs, BK, eggs benedict, etc.

    Our NORMAL and WEIRD regarding food is messed up. I'm happy to be a weirdo with food, if it makes me healthy and thin!

    And thanks for the idea on the lentils, I was just making up a grocery list and put them on there. The recipes in this thread sound yummy!

    I just wonder how they'd be boiled with some berries and a little honey. I always crave oatmeal or something similar during my snack time and was thinking lentils would have more to offer.
