Easiest cookie recipe ever!

I am blown away by how quick and easy I made dessert for my family get-together tomorrow. Peanut butter cookies are the bombbbbb.
200 g white granulated sugar (1 cup)
1 tsp baking soda
1 large egg
1/2 tsp vanilla
270 g crunchy or creamy peanut butter (1 cup)
Preheat oven to 350 F. Sift sugar and baking soda together into a large bowl. Add egg and vanilla, whisk til combined. Add peanut butter and mix til a dough forms. Use a spoon to drop 24 balls of dough onto a baking sheet (21-22 g each), about an inch apart. Make a criss-cross pattern on the top of each ball of dough with a fork, slightly flattening the ball.
Bake for 8-12 minutes, let cool for 15 minutes, and carefully remove from baking sheet with a spatula.
Crumbly, rich, and delicious! 102 calories per cookie, which is pretty damn low as far as peanut butter cookies can go.

I have just made these - they are delicious. Look nothing like yours lol but I am dreadful with baking - they were too sticky to flatten so they are all different shapes but they taste great!! and so easy to make - thanks for sharing1

I have either the same or a very similar recipe (mine uses an entire small jar of pb). I replace at least half the sugar with stevia or splenda. It made me mad that I'd been making pb cookies with flour my whole life
Edited to add: Had the recipe out because the family wanted them this week!
2 cups (1 small jar) pb
1 cup sugar
1 cup stevia
2 eggs or 6 TB egg substitute
2 tsp baking soda
1 tsp baking powder
.5 tsp salt
1 tsp vanilla
We dip the fork in sugar when we flatten them. I haven't made them in a while, but I'm pretty sure I reduce the amount of sugar (because I do in everything).2 -

Nice! Looks like my recipe, doubled, with a pinch of salt (which sounds great!)

I want to make these but I only like soft cookies. Is there a trick to make them soft? I bought some Toll House peanut butter cookie dough once and those turned crispy fast.0

If you want them soft, leave out the baking soda.
This recipe also works with some other nut butters if they're not runny. I made it once with macadamia nut butter and coconut flakes mixed in. Those were mind blowing.5 -

I have a simpler one:
1 small jar pb (2 cups)
2 eggs
1.75 c sugar
Use a tbsp to measure out. Roll into balls. Place on cookie sheet.
Flatten with fork.
Bake at 350F for 8-10 min.
I just made them 2 min ago.
Except I added semisweet choc chips. You have to bake about 2 min longer with add-ins.1 -
I've always made pb cookies with 1 cup pb, 1 cup sugar and 1 egg.
Very rich and decadent - not crispy either unless overcooked lol2 -
I made a version of these last night. I live in Italy and PP is difficult to find, so I substituted Nutella:
250g Nutella
1 egg
30g coconut
10g poppyseed
50g oats
1 tsp baking soda
I put them on parchment paper and they flattened out and became thin. So if you do this leave a lot of room around each one. They are thin, but chewy, and very good. Calories around 70 each.2 -
