Need some gym inspiration

I train 5-6 days a week and I try to mix it up as much as possible, this is what I currently do:
Mon: Cycle 16 miles to and from work. I then do 1hr of cardio in the gym, last night it was cross trainer
Tues: Cycle 16 miles to and from work. 1hr of Les Mills Body Pump
Weds: Swim 60 lengths / 1500m at lunch and run 4-6 miles in the evening
Thurs: Cycle 16 miles to and from work. 1hr of Les Mills Body Pump
Friday: 45min gym session on my lunch break, mostly cardio based but sometimes Il do legs and abs
Saturday: Rest day, I usually walk 4 miles into and back from town to keep active
Sunday: 6-8 mile run, sometimes Il do 30mins in the pool in the afternoon but focus on swim technique rather than distance
I work from home on Weds and Fri so very sedentry, even when I'm at work I am office based so glued to a desk
I got rid of my car and use my bike as my main mode of transport, so for me cycling is zero effort hence why I don't really see it as exercise so I'll still go to the gym. I have an endurance swim that I am training for and I am aiming for a triathlon later in the year hence why I will run and swim on the same day
My main issue is I don't really know what to do with myself on a Monday and a Friday. Mondays I used to do an all over workout in the gym but I found my muscles were too tired to put the effort in for pump, which is why I now do purely cardio and no weights. Friday I currently do an all over workout in the gym I usually use Joe Wicks for inspiration but I am getting bored. What are some good general gym based workouts? I love burpees! and I love making myself mini circuits

I agree with rest days--reading your list made me tired. I would do something completely different on those days--yoga, stretching, a long hike, .......5

Saturday is my rest day,
I don't want to add extra just looking for inspiration on my Monday and Friday gym sessions
My goals are strength and stamina, after my swim race I'l be entering a triathlon and an OCR so I need a varied programme, I've done tris and OCR before but I want to improve on how I performed
My recent weight gain is due to injury, so weight loss is a minor goal for me, i usually bounce back when I'm in full training mode0
